The Cascahuin Distillery is one of the most traditional and high-quality operations in the lowlands of Tequila. The name translates to "mountain of light," a reference to the mountain outside the town of El Arenal where it's located, which seems to attract lighting in every storm. Built in 1904 by the Rosales Family, not a lot has changed since then. They did replace their traditional tahona press with a roller mill in the 1980s, but recently reintroduced a tahona to the process to create a truly traditional tequila. This is the first release made with this old process and creates an exceptional product in the most traditional manner. 100% lowland agave, roasted in traditional brick ovens. Pressed on their new electric tahona wheel and fermented with bagasse in traditional ceramic vessels. Long, slow to proof distillation on tiny copper pots, this is one of the purest most traditional expressions of lowland tequila on the market. The gorgeous aromas of roast cucurbita, deep earthy spice and citrus waft from the glass. Texturally rich and highly complex on the palate, this should be considered the benchmark lowland tequila from which all others should be compared.

The follow-up to the unbelievable first batch of Huerta Singular, the Las Antenas highlights a completely different terroir with the same goal of creating a completely unique example of blanco tequila. The overripe pinto Blue Weber agave for this batch was grown entirely in the mineral-laden caliche soils of Vista Hermosa in Michoacán. The ground is rich in calcium carbonate at the high elevation field. At just over 5,000 feet in elevation, the agave was left to ripen in the field after the quixote was cut, resulting in an ultra-ripe "pinto" or painted agave as the pencas discolor as the plant concentrates sugars in the piña. The resulting spirit is one of the most unique expressions of tequila we've ever stocked. Bold mineral character is coupled with tangy citrus peel and vibrant fresh herbs. Bid on this bottle of Tequila Fortaleza Blanco Tequila. This blanco is wonderfully supple, with butterscotch flavors developed over a five day fermentation of the agave. Tequila Fortaleza is produced entirely within the walls of their estate, using centuries-old traditional methods which, although very labor intensive, create a tequila unequaled in taste and smoothness. Then they crush (or "mill") the agave as Guillermo's Tatarabuelo did over 135 years ago in a stone mill named The Tahona. The crushed agave is then washed with pure mountain water from the Volcán de Tequila, separating the pulp from the fibers to create an agave juice called "mosto." The woody fibers of the agave, called "bagazo, " are removed at this time and taken to the fields to use as compost. The agave mosto is then fermented naturally for five days in small wood vats, then double distilled using small, labor-intensive copper pot stills.

Tequila Los Valores Blanco is produced at Compañia Tequilera Los Valores in Ixtlahuacán de los Membrillos, Jalisco, a small town between Guadalajara and Lake Chapala. The distillery began production in 2019 and is run by Ricardo Aguilar and his family, with Maestro Tequilero Ricardo Antonio Aguilar overseeing production. Unlike the classic highland or lowland profiles often used to frame tequila, Los Valores sits between those regions, giving the blanco a distinct identity that draws on both the vegetal, green character of the lowlands and the sweeter, more mineral tones associated with the highlands. Made from 100% Tequilana Weber agave harvested between 5 and 8 years of age, the blanco is produced without diffusers or additives. The agave is cooked 70% in a stone oven and 30% in a low-pressure autoclave, then roller-milled before natural fermentation in stainless steel tanks with underground spring water. It is distilled twice in stainless steel pot stills and bottled at 40% ABV.
