The exceptional Cascahuin Distillery in the city of El Arenal is one of the finest in the Lowland. At nearly 7,000 feet in the red soils of Los Altos, maestro tequilero Roberto López tends 1,000 acres of estate agave—a rare level of ownership and control in modern tequila. Nephew to Felipe and Carlos Camarena of Ocho and G4 fame, Roberto carves his own path at El Sabino Distillery, where agave is harvested at 5½ years and roasted in traditional masonry ovens. El Tesoro de Don Felipe Tequila began in 1937 when the brand's namesake founded the traditional distillery in Los Altos (the highlands) of Jalisco, Mexico. The methods implemented by Don Felipe de Jesús Camarena continue today: including traditional hornos (ovens) and tahona wheels, alembic stills, and underground aging facilities. The distillery, known as La Alteña, continues its 60-year-long operation in the most old-fashioned way possible. As a result of all this care, the tequilas in El Tesoro's portfolio are some of the purest examples of what tequila should taste like, representative of the sweeter style of tequilas produced in Los Altos. If you are looking for real agave flavor, this will be a tequila to try.

The Cascahuin Distillery is one of the most traditional and high-quality operations in the lowlands of Tequila. The name translates to "mountain of light," a reference to the mountain outside the town of El Arenal where it's located, which seems to attract lighting in every storm. Built in 1904 by the Rosales Family, not a lot has changed since then. They did replace their traditional tahona press with a roller mill in the 1980s, but recently reintroduced a tahona to the process to create a truly traditional tequila. This is the first release made with this old process and creates an exceptional product in the most traditional manner. 100% lowland agave, roasted in traditional brick ovens. Pressed on their new electric tahona wheel and fermented with bagasse in traditional ceramic vessels. Long, slow to proof distillation on tiny copper pots, this is one of the purest most traditional expressions of lowland tequila on the market. The gorgeous aromas of roast cucurbita, deep earthy spice and citrus waft from the glass. Texturally rich and highly complex on the palate, this should be considered the benchmark lowland tequila from which all others should be compared.

There are few products where legacy is more important than in Tequila. Brands come and go, but families do not. LALO Tequila is named for the father of its founder, Eduardo "Lalo" Gonzalez. This nickname was given to him by his grandfather, Don Julio Gonzalez. Originally created to the specifications of his grandfathers recipe as a product to share exclusively with friends and family, LALO now represents the continuation of decades of high-quality tequila production. Using only mature highland agave, steamed slowly and rested for days before fermentation. Only agave, Champagne yeast, and water are added during fermentation before a slow careful distillation. LALO is only sold as a blanco, intended to capture the true essence of this special plant, and present it as the master himself intended. Yet, the brand is not intended to be saved for special occasions, but instead offered as a vehicle to make an occasion that much more special. Manuscrito Blanco is a carefully rendered highland tequila bottled at 42.5 percent ABV and crafted from fully mature Blue Weber agave grown in Los Altos of Jalisco. The famed G4 Tequila brand is the house brand of the exceptional El Pandillo Distillery in Jesus Maria. Refering to 4 generations of Tequila producers it was the first brand of Felipe Camerena when he left the family's famous distillery La Altena in 2007. Founded in 2011, he created a technologically advanced, sustainable, green distillery that still adheres to tradition in many terms of the production methods. Still crushed under physical pressure on his revolutionary adapted tahona affectionately named "Frankenstein" is an adapted steamroller that can crush agave with the same qualities as a traditional stone tahona, but uses a simple 1 horse power electrical motor. The follow-up to the unbelievable first batch of Huerta Singular, the Las Antenas highlights a completely different terroir with the same goal of creating a completely unique example of blanco tequila. The overripe pinto Blue Weber agave for this batch was grown entirely in the mineral-laden caliche soils of Vista Hermosa in Michoacán. The ground is rich in calcium carbonate at the high elevation field. At just over 5,000 feet in elevation, the agave was left to ripen in the field after the quixote was cut, resulting in an ultra-ripe "pinto" or painted agave as the pencas discolor as the plant concentrates sugars in the piña. The resulting spirit is one of the most unique expressions of tequila we've ever stocked. Bold mineral character is coupled with tangy citrus peel and vibrant fresh herbs. Casco Viejo is produced by one of the premier highland distillers, Tequila Supremo. Known commercially as Casa Camarena or Gran Dinastía, the famous house was established by Augustin Camarena in 1938. The prominent agave-growing family founded the town of Arandas and multiple distilleries. The woman who runs the distillery, Dona Elena Herrera Orendain, is Tequila royalty. The magnificent Casa Dragones has been blowing it up in the high-end tequila market. They've finally made their exquisite lowland tequila available to the masses. This surprisingly approachable blanco has all the finesse and structure of the Joven, but without the sweet vanilla and spice oak. This shows tons of apple and pear, with slight whiffs of the minerally vegetable that we expect from a lowland. On the palate it's clean and bright with lovely sweet fruit and only a slight cracked pepper quality. Ultimately, a fine follow up to a very difficult to beat opening act.

Espolón tequila is finally back in the U.S. with a fantastic new package and a new unbelievable price. The label is an ultra-cool "Dia de los Muertos" style mural, which immediately catches the eye. The price tag is more than reasonable, so that's two for two. If you actually get around to tasting it, then you're going to experience the ultimate trifecta in the spirits world: package, price, quality. Bid on this bottle of Tequila Fortaleza Blanco Tequila. This blanco is wonderfully supple, with butterscotch flavors developed over a five day fermentation of the agave. Tequila Fortaleza is produced entirely within the walls of their estate, using centuries-old traditional methods which, although very labor intensive, create a tequila unequaled in taste and smoothness. Then they crush (or "mill") the agave as Guillermo's Tatarabuelo did over 135 years ago in a stone mill named The Tahona. The crushed agave is then washed with pure mountain water from the Volcán de Tequila, separating the pulp from the fibers to create an agave juice called "mosto." The woody fibers of the agave, called "bagazo, " are removed at this time and taken to the fields to use as compost. The agave mosto is then fermented naturally for five days in small wood vats, then double distilled using small, labor-intensive copper pot stills.

Matíari, meaning "the first" in the Huichol language, is master distilled by David Partida using methods that honor the original way tequila was made centuries ago. This small-batch, additive-free spirit is crafted from hand-selected Weber Blue Agaves grown in the rich soils of Amatitán. The piñas are cooked slowly in a singular clay brick oven, ensuring even caramelization and maximum sugar extraction before undergoing a two-stage crust -first by roller mill, then by traditional Tahona stone. Fermentation takes place in open air with agave fibers present, adding texture and depth. This unique Tequila is the latest inistallment in the wonderful ArteNOM line. Coming from the famous, historic, family-owned Cascahuin Distillery in El Arenal, Jalisco, you know it's good. This blanco actually spends 28 days resting in a barrel that previously held Don Amado Mezcal. It's technically still a blanco as it spends less than the 30 days required to lable reposado. There is a hint of smoke and wildness that you don't normally find in the tequilas of Cascahuin. A beautiful addition to an already incredible lineup.

The high proof version of the excellent, traditionally-produced brand from the popular NOM 1477 - Puerto de Tequila distillery. Their other brands (Cava D'Oro, Adictivo and more) are extremely popular, but not produced with the same adherence to traditional production as the Amatitena brand. Here, the single-field agave is roasted in traditional brick ovens, pressed on tahona and fermented with wild yeast. Tequila Los Valores Blanco is produced at Compañia Tequilera Los Valores in Ixtlahuacán de los Membrillos, Jalisco, a small town between Guadalajara and Lake Chapala. The distillery began production in 2019 and is run by Ricardo Aguilar and his family, with Maestro Tequilero Ricardo Antonio Aguilar overseeing production. Unlike the classic highland or lowland profiles often used to frame tequila, Los Valores sits between those regions, giving the blanco a distinct identity that draws on both the vegetal, green character of the lowlands and the sweeter, more mineral tones associated with the highlands. Made from 100% Tequilana Weber agave harvested between 5 and 8 years of age, the blanco is produced without diffusers or additives. The agave is cooked 70% in a stone oven and 30% in a low-pressure autoclave, then roller-milled before natural fermentation in stainless steel tanks with underground spring water. It is distilled twice in stainless steel pot stills and bottled at 40% ABV. Verified additive free and packed with integrity, Los Valores Blanco is a clear, transparent expression of a newer Jalisco distillery focused on quality, elegance, and honest tequila rather than manipulation or shortcuts.

Celaya is one of those rare celebrity-adjacent spirits projects that actually has the bones to matter. Founded by former NFL brothers Ryan and Matt Kalil, the brand reaches back to their family story and Jose Celaya, who the family says made tequila on his ranch in Sonora in the late 1800s. The Blanco is the cleanest window into the project: 100% agave, certified additive free, made from a proprietary blend of Highland and Lowland tequilas, and produced at Casa Maestri, NOM 1438. That blend is the key, bringing together the lifted, citrusy snap we love from the Highlands with the earthy structure and mineral depth associated with the Lowlands.
