At nearly 7,000 feet in the red soils of Los Altos, maestro tequilero Roberto López tends 1,000 acres of estate agave—a rare level of ownership and control in modern tequila. Nephew to Felipe and Carlos Camarena of Ocho and G4 fame, Roberto carves his own path at El Sabino Distillery, where agave is harvested at 5½ years and roasted in traditional masonry ovens. After slow cooking, the piñas are tahona-crushed, then fermented naturally in both wood and stainless steel before distillation in a hybrid of stainless and copper pot stills. The Blanco is bottled at 40% ABV without additives, delivering the true essence of highland agave with a balance of floral lift, citrus brightness, and gentle minerality framed by a clean sweetness.
