Seven percent red wine added to the blend to make the NV Champagne Brut Rosé, which is based on the 2020 harvest and is 45% Chardonnay, 25% Meunier, and the rest Pinot Noir, with about 45% reserve wine. A classic pink salmon hue, the nose is classic and pretty with notes of fresh peaches, raspberries, roses, and chalky earth. Medium-bodied and rounded, it’s approachable and fresh in style, with lovely purity and a pretty feel throughout. It’s delicious now but has the ability to age with ease over the coming 10 years. Disgorged in the first quarter of 2023, 4.7 grams per liter dosage (although interestingly, they are now including the total grams per liter, in this case 5.3 grams per liter in the final wine). A succulent, delicious and precise brut rosé, made of chardonnay, pinot meunier and pinot noir. It has notes of wild currants, peach skin and mild spices. It’s medium-bodied and vivid with fine bubbles and plenty of succulence. Sour cherries and redcurrants on the palate. Fresh acidity and a comforting, fruity character to the delicious finish.

Based on the 2020 vintage, Billecart-Salmon's signature rosé appears to be on its finest form of recent years under cellar master Florent Nys, full of fragrant, crunchy redcurrant, red cherry and orange fruit with an alluring hibiscus-like floral lift and subtle green peppercorn spicing. The Meunier wraps the intensity of the vintage base in a little softness that keeps the focus on effortless ease (helped by the selection of delicate Chardonnays and young, fresh reserve wines), all adding up to a rosé of immediacy and charm, sweet-natured without sweetness and fragrant without overt fruitiness. 40% Chardonnay, 30% Pinot Noir and 30% Pinot Meunier. Aromas of rose, peony, red berries and guava preface the NV Brut Rosé, a medium to full-bodied, elegant and vinous Champagne rosé that concludes with a long, ethereal finish enhanced by menthol notes. A blend of 45% Chardonnay, 35% Pinot Noir and 20% Pinot Meunier, it's based on the 2014 vintage with 46% vins de réserve from nine different vintages and the addition of 6% as a red wine, vinified and matured in stainless steel. This is the benchmark in rose Champagne, and it deserves every bit of its fame. I find it elegant and balanced every time that I have it, and the blushing pink color is always perfect. The supply of this wine is strictly limited by the amount of old, massal selected Pinot Noir in one village- Mareuil-sur-Ay, that Billecart has access to. It is this tiny villages best produce that makes the red wine that gives this nectar its color, bouquet and timeless elegance. I like the wine best as an aperitif, the only thing it need to pair with is a good glass.

The wine that Billecart is probably most well-known for is their rose and it's done very well! I usually choose blanc de blanc, or blanc de noir when I'm getting my bubbles on. Mostly because I tend to feel that rose' sparklers need a bit more time, after popping that top, to open up, and I just really don't have time to wait when I'm trying to celebrate! Get in my glass, and "get in mah belleh", to quote a favorite actor of mine. This needs no extra time to blow off the funk that can sit in the glass for a bit. It's pretty, fresh, and crisp, right from the start. High toned bright fruit really make this a fresh, lifted, wine to toast to any great occasion. Although it's quite dry, it still shines through with a nice measure of sweetness from the fruit. This is the sparkling rose to beat!

Billecart's "Le Rose" is not only one of the best-selling and highly rated rose champagnes in the world, but its release in 1970 was an announcement that rose champagne was now a thing - a luxurious, premium sparkling category that had never existed in Champagne's long and storied history. Made in the "assemblage method" -- adding still red wine to the blend -- Le Rose is 43% Chardonnay, 33% Pinot Noir, and 24% Meunier. The dosage was dropped from 9g/l to 5.1g/l, resulting in a much drier and more refined style of champagne. This is the reason for the name change from Brut Rose to Le Rose. The current release is Extra Brut. Next year, it may be brut again. Billecart will make that decision once each harvest is complete. Wines were fermented in stainless steel tanks and went through partial malolactic fermentation to preserve freshness. When Billecart-Salmon decided to make a rose champagne, they approached it with the idea that if tasted blind, you wouldn't know it was a rose because its elegance and finesse would match that of regular champagne. It's a historical fact that their approach worked like gangbusters, and Billecart's Le Rose has become THE iconic offering from this old Grand Marque. Just one of those champagnes that always lives up to its hype.

What could be more civilized than treating your special someone (or yourself) to an aperitif of rosé Champagne? For good reason, the Billecart-Salmon Brut Rosé defines the entire rosé Champagne category. Composed of 40% Chardonnay, 30% Pinot Noir and 30% Meunier, it gets its color and rosé flavor from 8% red wine. The red wine is almost exclusively sourced from Billecart’s home village of Mareuil-sur-Aÿ, from massal-selected Pinot Noir plots of 60–80 years old. These plots are picked at still red wine ripeness—12% potential alcohol—and then de-stemmed and cold macerated before fermentation. It is this red wine that makes the Billecart Rosé so special, and unfortunately also limits the supply. The finished product is the most elegant, restrained, dry, and delicate wine that one could drink. The complexity is there if you search for it, but the pleasure is easy to find!
