Very pale yellow. Complex nose offers saline, herbal and spicy notes, with a minty coolness. Wonderfully subtle, complex and precise, with a distinctly ethereal quality, high-pitched minerality and superb lift. Finishes very dry and persistent, with lovely lift. This is made inside an igloo in Hokkaido, in Japan's extreme north, where below-freezing temperature prevents unwanted bacteria from surviving, thus ensuring a very pure sake. The clear sake is separated from the fermenting rice lees by putting it into canvas bags and allowing the sake to drip out overnight (as opposed to pressing it).

There is a reason why this gem is slightly more expensive. It is elegant and subtle and fine. The nose is cool and refreshing with sea salt, light pine scents and green grape. On the palate, the texture is like silk and it has peach pit, tropical fruits and a nice "tang" of pepper at the back of the throat. This is a seamless, clean and superbly interesting sake.

This sake has been popular at K&L for many years. I think that anyone who likes dry sake will enjoy this. It is clean and delicate with a soft clean juicy flavors that have interesting and tasty savory undertones. Complex and delicious, it will go well alone or with light foods.

You get hit with perfectly ripen cantaloupe and marshmallow on the nose. The taste is similar to a Nigori and the white peach and melon are refreshing and extremely present on the tongue. This Junmai Daiginjo sake goes well on a hot summer day when you want to quench your thirst!

Notes

This producer goes to phenomenal lengths to produce the cleanest sake possible. Some might even say they go over the top. When the temperature falls below 14 degrees Fahrenheit, they build an igloo. Inside this structure, the air is a constant 28 degrees Fahrenheit, with 90% humidity and no wind, and is an environment free of harmful bacteria. In addition–because they do not like the bitter compounds that result when the sake is pressed from the lees–they put the sake into canvas bags and hang them to slowly drip the "free run" sake. Ginga Shizuku "Divine Droplets" is highly fragrant, lovely, elegant, very clean, and subtle. All the trouble the brewmaster goes through shows in the glass. This release is expensive but well worth it.
