I am not allowed to have favorite Champagnes, but any survey of my recycling bin would reveal that this holds a very special place in my heart. This wine is single vineyard, from the very steep Gouttes d’Or site in Brouillet, and has a very different style than the Chardonnay from the Côtes de Blancs. This is creamy, decadent wine, and great on its own or with any shellfish. I love how this wine is always clean and refreshing, but has depth that makes me always come back for more!

The Ariston Aspasie Blanc de Blancs Brut Champagne is 100% Chardonnay and is a real "La Goutte d'Or," or "drop of gold," produced from a single variety grown in a single-vineyard in a single village, Brouillet, which has a super cold microclimate that gives the Aspasie champagnes mouth watering acidity. Crisp with a round finish, loaded with stone fruit, yellow apple, citrus, and pear. It's no wonder that piles and piles of empty Aspasie Blanc de Blancs bottles can be found in Gary Westby's recycling bin 24/7/365.

Single vineyard off a steep slope. Light, citrus-driven, high acid and dangerously easy, it's the kind of bottle that disappears before you know it, such and easy bottle to crush!

The Ariston's vineyards are vastly different than those of the other blanc de blancs producers that we carry. The steeper slopes, less chalk and more fossils in the soil of Brouillet make for a rich, creamy style of Chardonnay Champagne that will appeal to just about anyone. This is one of my favorite toasting Champagnes. All of the flavors are up-front; it is open-knit and fun. It is a perfect way to start a party. (Gary Westby, K&L Champagne buyer)
