2022 Domaine des Roches Neuves (Thierry Germaine) "Les Memoires" Saumur-Champigny Rouge

All from a vineyard planted in the early 1900s, the vines are well over a century in age. The grapes are all hand harvested, 100% de-stemmed and fermented in conical tanks. Fermentation lasts 10 to 15 days with light pumpovers during fermentation, meant to infuse the grapes and not over extract them. The wine is then aged in 2500L foudre for 12 months before bottling. *Biodynamic*
