The 2023 Cavallotto Langhe Nebbiolo (DOC) is essentially a "Baby Barolo" of extraordinary pedigree, acting as a direct, uncompromised insider’s pass to the family’s revered estate in Castiglione Falletto. Alfio, Giuseppe, and Laura Cavallotto do not source outside fruit for this bottling; instead, it is estate-grown entirely on the lower fringes of their legendary Bricco Boschis cru. Rooted deeply in highly calcareous Helvetian clay-limestone marls, this juice receives the exact same elite treatment as their flagship Barolos: a slow, natural yeast fermentation in stainless steel with semi-submerged cap maceration for 18 to 22 days. It is then raised for roughly 15 to 18 months strictly in large, neutral Slavonian oak botti, yielding a deep, terroir-driven architecture with zero modern makeup.
