Part of Li Veli’s Askos project—dedicated to resurrecting historic native cultivars—the Falvo family sources this fruit from high-density, clay-limestone soils in the cooling maritime zone of Cellino San Marco. To protect Susumaniello's natural, crunchy energy from getting bogged down by over-extraction or heavy oak makeup, it is aged for just 9 months in a combination of large, neutral French oak casks and stainless steel.
