Mauro Bisci crafts this absolute benchmark white from organically farmed estate vineyards sitting between $300$ and $350$ meters above sea level, where the vines are protected from maritime influences by the Apennine ridge. Rooted in highly calcareous clay soils rich in marine fossils, the juice is handled entirely in temperature-controlled glass-lined concrete vats with extended fine lees aging, completely blocking malolactic fermentation and avoiding heavy oak makeup to let pure, high-altitude energy take center stage.
