Sourced from organically farmed, 30-year-old vines rooted in the classic sandy, clay-limestone soils of Santo Stefano Roero, this bottling acts as a pure, unmanipulated monument to the variety that Alfredo Currado famously helped rescue from extinction. To maintain its remarkable high-toned energy, Vietti ferments the fruit slowly at cool temperatures in stainless steel. Crucially, they seal the tank hermetically mid-fermentation to reabsorb a touch of natural, prickly $CO_2$ and completely block malolactic fermentation, followed by brief, intensive lees aging to add tactile skin-contact weight to its mineral skeleton.
