The 2024 De Fermo "Don Carlino" Pecorino (Colline Pescaresi IGT) is a monumental, deeply intellectual, and uncompromisingly artisanal expression of the variety. Stefano Papetti and Elena Celli craft this benchmark white from biodynamically farmed vines rooted in the clay-limestone soils of Loreto Aprutino, a historic Teramo-adjacent enclave defined by its dramatic diurnal shifts between the Apennine mountains and the Adriatic Sea. Spontaneously fermented with native yeasts and aged in a combination of concrete tanks and large, neutral wooden casks (botti), it is bottled unfined and unfiltered, avoiding any modern oak makeup or technical manipulation to preserve its raw, visceral energy.
