Medium to full-bodied, ample and layered, it's fleshy and complete, with melting tannins, succulent acids and a long, peony-inflected finish. Otherwise there is both good volume and detail to the less prominently mineral-driven medium weight flavors that possess a raspy mouth feel, all wrapped in a delicious, balanced and nicely complex finale. It has a precise bouquet with mineral-rich blackberry and a scent of sea cave. The palate is very well balanced, elegant and feminine with tart red cherries, a touch of shucked oyster shell with a precise and tender finish. One of Bouley’s most sophisticated offerings.
