Cinco Sentidos’ La Colección Mixteca has become one of the most exciting projects in agave spirits because it documents intensely local traditions rather than forcing them into a commercial mold. This Espadrille con Pichomel from Edition 3 comes from husband-and-wife mezcalero team Atelo Ramírez and Laura Arriaga in Los Reyes Metzontla, Puebla, and brings together two distinct agaves in one integrated production. The Espadilla, Agave rhodacantha, was sourced from Laura’s home state of Morelos, while the wild Pichomel, Agave marmorata, was harvested by Atelo from the hills around Los Reyes Metzontla. The agaves were roasted together for five days in an underground oven with mesquite and pirúl, crushed by hand with wooden mallets, dry-fermented for four days, then fermented another twelve days with spring water. The mash was double distilled in their homemade hybrid still of galvanized steel, clay, and copper. Bottled at 47.31% ABV, this tiny Mixteca release is vibrant, savory, and deeply textured, with roasted agave, dried herbs, citrus oil, warm earth, white pepper, faint smoke, and a taut mineral finish. The Espadilla brings breadth and structure, while the Pichomel adds wild perfume and stony depth. A singular, transportive bottle from one of Mexico’s most important small-batch agave projects.
