The straight Papalome from Cinco Sentidos’ La Colección Mixteca Edition 4 may be the purest expression of this extraordinary Puebla series. Produced by the husband-and-wife mezcalero team of Atelo Ramírez and Laura Arriaga in Los Reyes Metzontla, it captures wild Agave potatorum from the Mixteca Poblana region without the framing device of an ensamble or the familiarity of cultivated Azul. Atelo harvested just 263 Papalome piñas, then roasted them for five days in an underground oven with mesquite firewood and pirúl leaves used as insulation, a traditional detail that seems to echo through the finished spirit. After roasting, the cooked agaves were crushed by hand with wooden mallets, then allowed to dry-ferment for five days before spring water was added for another twelve days of fermentation. The mash was then slowly double distilled in the family’s hybrid still, built from galvanized steel, clay, and a copper serpentine, and proofed by Atelo using heads, hearts, and tails rather than simple dilution. Rested in glass for a year before bottling in June 2024, the entire batch yielded only 216 liters. This is wild Papalome in a beautifully raw, intensely regional form: floral, mineral, savory, and quietly feral, with roasted agave, green herbs, wet stone, white pepper, subtle smoke, dried citrus peel, and a deeply textured finish. Not polished in the commercial sense, but that is exactly the point. This is a vivid, handmade, single-place spirit hat feels alive in the glass.
