La Palazzola is the visionary estate of Stefano Grilli, located near Terni in Umbria, where he’s been crafting sparkling and still wines using metodo ancestrale since the 1980s. The winery sits on a breezy hillside crowned by medieval ruins, offering ideal airflow for healthy, low-intervention farming. Grilli, a trained enologist, is known for radical experimentation—reviving forgotten grapes, fermenting in amphorae, and aging wines under glass closures. His sparkling wines are made without dosage, filtration, or added sulfites, and often re-ferment in bottle using must from the same harvest.
