Nick and Zachary Taylor seem to be two men on a mission: they're determined to prove that Canadian Whisky is more than just "smooth." The goal is to source extremely high quality aged stocks from Canada's best distillers and blend them, uncut and unfiltered. Proving that the category has more to offer shouldn't be difficult, but getting bourbon nerds and whisky geeks to buy in is another story. That aspect requires actually producing, not providing lip service; they have to make something people want to drink. They've achieved that wholeheartedly with their small batch blends of old cask strength Canadian whisky. "Batch 3" is a blend of five distinct whiskies between 17 and 25 years of age. Built around a base of 18 year old rye whisky aged in ex-Tequila barrels, they've added a healthy portion of similarly aged rye from ex-Speyside Scotch barrels. A balancing 21 year old corn component was aged entirely in ex-American oak barrels, with the top dressing adding body and spice from two components aged 17 and 21 years in Hungarian Oak barrels. The resulting whisky consists of 64% rye, 32% corn and 4% malted barley. Offering wonderful balance, "Batch 3" is full of zesty citrus and sweet maple aromas, tempered perfectly with bold baking spice and sweet pome fruit. Textural and rich on the palate, this product truly transcends most people’s perception of Canadian whisky.
