A lightly sparkling wine from the Touraine area of the Loire Valley, Cosmobulles reflects Côme Isambert’s commitment to organic farming and low-intervention cellar work. The cuvée draws primarily on Chenin Blanc with a small proportion of Grolleau, bottled mid-fermentation to capture a fine, natural mousse. Native yeasts guide fermentation, with no dosage and only minimal sulfur at bottling. The wine presents orchard fruit, quince, and a subtle saline note, with a gentle haze typical of its method. It finishes dry, with moderate alcohol and a restrained but persistent effervescence. The balance favors clarity and tension over overt fruitiness.
