Benoît Courault is a Loire Valley grower based in Faye-d’Anjou, in the Anjou-Saumur zone, who established his domaine in the mid-2000s after training in Beaune and working in Tavel with Eric Pfifferling of Domaine de l’Anglore. He is not from a winemaking family; his early life was spent around horse breeding before he entered the wine trade as a sommelier, then shifted fully into viticulture. Courault farms approximately five to six hectares, planted primarily to Chenin Blanc, Cabernet Franc, and Grolleau on schist soils. His viticulture is organic to biodynamic in practice, emphasizing soil health, manual work (including horse plowing), and the recovery of vineyards previously treated with chemicals. In the cellar, he follows a low-intervention approach: indigenous yeast fermentations, minimal or no added sulfur depending on the cuvée, and no fining or filtration. Aging typically takes place in neutral barrels, with relatively long elevage before bottling. His wines are associated with the natural wine movement but are noted for precision and structure.
