Clairin Ansyen Casimir Aged 35 Months "K&L Exclusive" Cask No CA17CR 1 Single Estate Sugarcane Juice Haitian Rum (750ml)

This extremely special barrel of rum was distilled by the wonderful master Faubert Casimir. His 50 hectare policulture farm is a stunning example of the rural rum tradition in Haiti. The cane grows among groves of mango, palm, banana, and lime. The heirloom soft cane, usually Hawaii Blanche and Rouge are cultivated by hand and fermented naturally in wooden vats in open conditions before being distilled on hand made pot stills. The rum was distilled on December 27th, 2017 and filled into a ex-Caroni barrel sourced directly from the special defunct distillery in Trinidad. Bottled at cask strength of 48.8% abv without additions or corrections of any kind, this special barrel of rum exemplifies the future of Haitian sugarcane rum. The raw intensity of the wild Casimir spirit is bridled but not completely tamed. The wild funk of Caroni intertwines perfectly with the savory complexity of the raw cane spirit. Only 78 bottles of this special rum were bottled exclusively for K&L Wine Merchants.
