This intense, Paso Robles, 100% Cabernet Sauvignon shows its true dark purple color in the glass. Black fruit, currant and underlying layers of cedar and leather show off the French oak influence. A soft entry combines flavors of cherry, plum and a hint of mint. The full-bodied mid palate segue into a lush, ripe finish with nuances of cedar and caramel.

Justin Wines started in 1981 when Justin Baldwin planted Bordeaux varieties in the limestone soils of Paso Robles’ Adelaida District, aiming for polished, cellar-worthy blends shaped by the region’s dramatic day–night temperature swings. The team still leans on hand-harvesting, small-lot fermentations, and French oak aging, pairing those methods with modern touches like the Air Knife to improve fruit quality. Winemaker Scott Shirley, now more than a decade into his tenure, ferments vineyard blocks separately to fine-tune structure and balance. The estate has expanded its acreage over the years, but the focus remains tight: Cabernet-driven wines built from a mix of traditional craft and precise, tech-supported farming.
