The 2017 aux Gravains from Domaine Pavelot is another absolutely stellar young wine in the making. The aromatic constellation here is pure and elegant, wafting from the glass in a superb mix of red and black cherries, a touch of red currant, Savigny spices, raw cocoa, orange peel, gamebird, stony soil elements, cedar and a nice topnote of mustard seed. On the palate the wine is deep, full and very transparent in profile, with sappy core of very pure fruit, great length and grip and a youthfully complex, vibrant and beautifully precise finish. This will need a bit of bottle age to really start to hit on all cylinders, but it is going to be stellar when it is ready to drink. (Drink between 2024-2065)

The 2017 Savigny-lès-Beaune Aux Gravains 1er Cru clearly offers more red fruit than the Aux Guettes tasted alongside; this is more open and perhaps conveys more joie-de-vivre at the moment. The palate is medium-bodied with crisp grainy tannin and slightly brittle in texture, but very focused, showing a tangible sense of energy and frisson toward the minerally finish. The standout wine from Pavelot this vintage? It could be.(NM)

Note: from a .60 ha parcel where two-thirds of the vines are more than 70+ years of age. An overtly earthy yet still very pretty nose reluctantly offers up notes of plum, dark currant and discreet spice nuances. Once again there is a nicely refined mouth feel to the medium-bodied flavors that exude a subtle minerality on the slightly rustic and youthfully austere finish that is firm enough to suggest that this should offer good mid-term development potential.
