The Chevillon 2005 Nuits-St.-Georges Les Chaignots boasts a gorgeous aroma of ripe blackberry and red currant with piquant notes of walnut oil, and marrowy meatiness resembling reduced, faintly caramelized pan juices. In the mouth, it displays amazing depth of meat and mineral elements along with persistently tart, juicy and vivid blackberry and red currant. Herbal and fruit pit notes lend a medicinal aspect to the flavors – and who wouldn’t want this prescription?! The counterpoint of creaminess of texture with persistent brightness, and of meaty depth with high-toned inner-mouth perfume is striking, and the finish – showcasing ultra-fine tannins – welds together fruit, meat, and mineral with perfect clarity and seamlessness. If further proof were needed that the Chevillons are in a class by themselves among the major Nuits-St.-Georges landholders, they certainly delivered it this year. Like so many other vintners, they reported backing off on pigeage this year – and heaven knows, the resultant wines don’t lack for concentration. Their Bourgogne Passetoutgrain, Bourgogne, and Nuits-St.-Georges Les Perrieres had all just been sulfured and filtered, so Bertrand Chevillon declined to show them. He was as yet noncommittal, however, about when the other wines would be bottled, although this would probably continue through Spring, and be accompanied by the estate’s usual light filtration.(DS)

This has turned out slightly better than I imagined with its brooding and relatively closed nose of earth, spice and red and dark currant scents. I would definitely suggest decanting this as the aeration helped considerably. The seductively textured and broad-shouldered flavors possess both good richness but also good detail before terminating in a lightly mineral-inflected and impressively long finish where the only nit is a noticeable touch of warmth. Unlike many upper level 2005s today this could actually be approached soon though I would still recommend holding it for another 3 to 5 years first.

Dark bright red. Ripe blackberry and stony minerality on the showy nose, lifted by sexy oak spices. Fat, sappy and deep, with very good density for this cuvee. Finishes with broad, sweet tannins and excellent length. The crop level of 35 hectoliters per hectare was down 30% from normal, noted Bertrand Chevillon. (ST)

The Chaignots, as is its wont, is much more fleshy and forward stylistically, albeit with sound structure for aging underneath the puppy fat. The nose on the 2005 is really quite lovely, as it offers up notes of plums, blood orange, chocolate, a bit of game, a rather elegant base of soil (particularly for young Nuits) and a bit of vanillin oak. On the palate the wine is full-bodied, plump and generous, with good, but not remarkable acidity, a fine core of fruit, and a long, ripely tannic and eventually velvety finish. Quite good juice. (Drink between 2012-2030)
