
2004 Giovanni Canonica "Paiagallo" Barolo

Giovanni Canonica is a small producer based in the town of Barolo, farming 1.5 hectares in the Paiagallo vineyard directly on the hill above the village, a site where the only other proprietors are Marchesi di Grésy and Fontanafredda, neither of whom bottles it as a single-vineyard wine. Farming is carried out without herbicides, pesticides, or fertilizers, with maceration lasting 30 to 40 days using only indigenous yeasts, followed by aging in cement and Slavonian oak.
