Xavier Weisskopf founded Le Rocher des Violettes in 2005 in Saint-Martin-le-Beau, within the Montlouis-sur-Loire appellation. The 2022 “Touche-Mitaine” is made from Chenin Blanc, the defining white grape of Montlouis, an appellation situated on the Loire’s left bank opposite Vouvray.
