More than 1,000 kilometers from mainland Japan, Ishigaki has a warm subtropical climate, dramatic terrain, and a long history of sugarcane cultivation. Neon Seas begins with blackstrap molasses from the island’s only sugar mill, made entirely from local Ishigaki sugarcane, giving the rum its naturally rich, pungent, unmistakably tropical character. It is produced at Seifuku Distillery, a third-generation house best known for traditional Okinawan awamori, the deeply savory rice spirit that has defined the region for centuries. Their new Rum Lab takes that local distilling knowledge in a bold new direction, creating what they call Yaeyama rum, a terroir-driven style rooted in island agriculture and Japanese precision. Double distilled in a "Royal" stainless steel pot still and bottled at 42% ABV, this silver rum is anything but neutral. Expect bright tropical funk, brown sugar, roasted sweet potato, honeyed grain, earthy umami, truffle, and a flash of black garlic, all wrapped in a clean, vibrant frame.
