Maison des Joncs was a tiny Burgundy project created by Jae Ok Chu, who produced just two vintages—2017 and 2018—before pausing the domaine to take the winemaking role at Château Grillet. Founded after years of training in Beaune and work at Domaine d’Eugenie, the project relied on purchased fruit and minimal-intervention methods shaped by inspirations like Overnoy and Ganevat. Fermentations used indigenous yeasts, with élevage in stainless steel and barrels at Dominique Lafon’s facility, aiming for purity and precision. Production was extremely small, with parcels such as Beaune Longbois showing tension and minerality from high-altitude, stony clay-limestone soils. The wines—Pinot Noir and Chardonnay from sites in Beaune, Savigny, and the Hautes-Côtes—were noted for delicacy and lift, reflecting careful farming and restrained cellar work. The project ended when Chu accepted the offer to lead Château Grillet, leaving the 2017 and 2018 bottlings as rare snapshots of her brief Burgundy chapter.
