Eric Forest is part of a new generation of growers in the Mâconnais focused on crafting highly site-specific Chardonnay that emphasizes precision, energy, and transparency to terroir. The “24 Carats” cuvée is drawn from old-vine parcels in and around Pouilly-Fuissé, where limestone-rich soils and warm southeastern exposures provide both concentration and mineral tension. Forest’s minimalist cellar approach and careful élevage preserve the vibrant acidity and chalky structure that distinguish the best wines from this increasingly acclaimed corner of southern Burgundy.
