"One Of Us" Cuishe Mezcal is a striking, first-edition release from Maestro Mezcalero Jacinto Gutiérrez in Santiago Matatlán, Oaxaca. Marketed as "The Wild One," this Joven expression is crafted from 100% wild-grown Agave Karwinskii (Cuishe), which takes between 10 and 14 years to reach maturity. True to artisanal standards, it is produced using ancestral Zapotec methods: roasted in underground pits, fermented with wild yeasts, and distilled in small copper pots using deep well water. Bottled at 45% ABV, this mezcal captures the "lean and austere" profile characteristic of the Karwinskii family. The nose is dominated by an airy minerality and dried herbs, while the palate delivers a complex balance of roasted maguey, black pepper, and citrus. Unlike some of the heavier, smokier mezcals on the market, One Of Us shows a delicate floral and honeyed sweetness that softens its natural intensity, leading into a long, clean finish. With only 7,200 bottles in this first edition, it’s a sophisticated, additive-free snapshot of Oaxacan terroir.
