Pur Sang is one of the core cuvées from Domaine Dagueneau, the Saint-Andelain estate built by Didier Dagueneau and now run by Louis-Benjamin Dagueneau. It is Sauvignon Blanc from the Pouilly-Fumé sector, made with the estate's exacting vineyard work and extended cellar élevage in custom oak vessels. Pur Sang was the second parcel bottling from Dagueneau. Coming from a small vineyard knonw as La Folie, it is just north of the village of Saint-Andelain. Its gentle slope has a south, southeast facing exposure and is made up primarily of deep clay-limestone. There is virtually no silex in this soil. Occasionaly some of the smaller plots from the Saint-Andelain hill will find their way into this cuvee. All barel fermented and aged in a mix of 450 and 600 liter barrels, it also sees a few of the famous cigar shaped barrels. Pur Sang remains one of the favorite cuvees of collectors and enthusiasts alike for its sleek purity and chalky driven mineral style.
