Grown at the very western edge of the DO Rueda where it meets Toro, this Verdejo comes from complex soils of gravel, clay and canto rodado. It is fermented in a mix of concrete eggs, stainless steel and French oak, and it has benefited from some time in bottle. With pear, apple and citrus aromas, the wine offers both finesse but structure and is driven by a steely core. A really complex wine that shows off the complexity of the estate’s vineyards.

The 2024 Celeste Verdejo Sur Lies includes 14% Sauvignon Blanc from Rueda. At this stage, it leans strongly toward Sauvignon, with aromas of apple, grapefruit, lime and herbs. The palate is slightly creamier, with refreshing acidity. This is a wine that straddles both Verdejo and Sauvignon profiles, offering clear, expressive flavor and a taut, energetic structure. (JH)

Albariño might be the white grape people most commonly associate with Spain, but I’d like to nominate another worthy variety: Verdejo. The flagship white grape of Rueda, a region sandwiched between Ribero del Duero and Toro in north-central Spain, Verdejo produces stunning wines of concentration and complexity, with perhaps a touch more body and stone-fruit-driven intensity than Albariño. The region is more inland and warmer than coastal Spain, but high elevation and a big temperature swing between day and night helps to keep the wines here snappy and fresh. The other major white grape grown in Rueda is Sauvignon Blanc, and when blended with Verdejo, as the 2024 Pago del Cielo “Celeste” Verdejo is, each variety complements the other, leading to a sum greater than its two individual parts. In this wine, 14% Sauvignon Blanc highlights youth and primary fruit, lending an ultra-zesty and racy finish, while the Verdejo contributes signature yellow peach and nectarine notes, as well as Meyer lemon zest and orange blossom. Incredibly vibrant, with ripe and juicy yellow fruit notes, the finish lingers. This wine is fermented in stainless steel, which emphasizes its crispness and vibrancy, then aged in the same tanks on the fine lees, which adds a bit of richness on the palate – just enough to add depth and weight – making it perhaps the ideal food wine for warm summer days. I would pair this wine with shrimp cocktail, sushi, summer salads, or even just on its own, hopefully poolside on a sunny day.

One of his notable ventures is the Pago del Cielo project, which reflects his family’s expansion beyond their Catalan roots into other prestigious appellations. This project includes both Ribero del Duero and Rueda, two regions located in far a focus on the Rueda denomination of origin, an area widely respected for producing fresh, expressive white wines. In Rueda, Torres sought to highlight the potential of the indigenous Verdejo grape, which has become the region’s signature variety. Pago del Cielo represents a careful balance between respecting local viticultural traditions and applying modern winemaking techniques. The 2024 “Celeste” Verdejo is 86% Verdejo blended with 14% Sauvignon Blanc (the second most widely planted variety in the appellation), all grown in estate vineyards on the slopes of the Duero River near the town of Villafranca de Duero. The wine is fermented in stainless steel then aged for several months on the fine lees in tank, adding distinctive complexity and mouthfeel to this friendly and approachable wine.
