90% Cabernet Sauvignon from the historic Frediani Vineyard in the Calistoga AVA. The Cabernet was co-fermented with 10% Merlot from the organically farmed Solares Vineyard in St Helena. After a four day cold soak, native yeast fermentation commenced. Maintaining cooler temperatures, and 2 x daily pump overs or punch downs. The fermentation was slow and controlled lasting 3 weeks. The must was then gently pressed, and aged in just 10% new French oak for 14 months.
