The maritime influence and warm Mediterranean climate shape Kallisto, a 100% Assyrtiko grown on the estate’s coastal holdings, where sea breezes preserve freshness and tension. Vinified in stainless steel with brief skin contact and aged sur lies at low temperatures, the wine emphasizes clarity and precision over oak influence. The wine shows a bright white-green hue and offers lifted aromas of citrus zest and freshly grated lemon, followed by a poised, generous palate with pear and saline mineral undertones.
