Coming out of Frankfort, this is Castle & Key’s Restoration Rye, and they’re taking a cool, vintage approach with this one. Instead of a standard blend, they organize the season’s best barrels into "pods" based on their sensory profiles, balancing them out to make the best whiskey possible. The mash bill is a bit of an outlier with 63% German rye and a hefty 20% malted barley, all fermented using a sweet mash process and water from their historic key-shaped spring. It’s aged at least three years in char #3 barrels and bottled at 52.5% ABV without chill filtering, so it keeps all that body. On the nose, it’s a total fall vibe with mint, apple pie, nutmeg, and orange peel. That transitions into brown sugar, clove, and fig on the palate, finishing with a spicy, confectionary hit of cinnamon and allspice. It’s priced and proofed perfectly for cocktails, but it honestly has enough nuance and spice to be a top-shelf sipper on its own.
