The 2021 Pur Xarel.lo, which is sourced from different vineyards and is a village white for them, fermented with indigenous yeasts, partly in new 500-liter French oak barrels and partly in 1,600-liter concrete eggs, where the wine matured until bottling. It has 12.5% alcohol and a pH of 3.13. 2004 was the first vintage and the first serious aged white wines not produced with French varieties in the zone, feeling proud of the Xarel.lo grape. This is very clean and defined, designed to be able to age in bottle. 2021 was already a dry year, but the wine has no heat, ripeness or warmth, one of the advantages of the grape. It has some savory notes and a seamless palate with vibrant and focused flavors, getting more and more mineral with time in the glass. Ramón Parera compared it with 2017 and 2019, two years when the plants resisted the heat and delivered very complete wines. Their wines are more introverted and serious, subtle on the nose and with minerality on the palate. (LG)

This is a very interesting wine, it's the still wine from a producer that does Corpinnat (fancy Cava) and it really has the nose of a sparkling wine, there's a touch of lees, a kind of tree-fruit and citrus component, which I think actually makes it a little bit more compelling to me, there's this kind of mystery and intrigue when expectations are subverted. The palate too has a similar kind of thing going on where you almost expect there to be bubbles just by the palate alone, but it's deliciously still with very similar fruit to the nose and a lingering zest on the finish. I enjoyed this a lot more than I expected to, and it's a very fun bottle to try.

Pardas was founded by Penedès growers Ramon Parera and Jordi Arnan after they acquired the historic Can Comas estate in Alt Penedès, where they planted local grapes like Sumoll and Xarel·lo. From the beginning, their work has centered on a holistic, biodynamic-inspired approach that integrates forest, crops, and vineyard into a single ecosystem. The vineyards are dry-farmed, soils are left unplowed to protect microbiology, and only organic methods are used. Pardas is part of a regional revival of native varieties, relying on cuttings from old local vines to reestablish traditional grapes. In the cellar, they use spontaneous fermentations and minimal intervention to craft wines that are expressive, mineral, and refined.
