Produced in Aridea, Greece, this is a truly regional gin, built on a base spirit distilled from locally sourced sugar beet molasses and layered with 10 botanicals that speak clearly of the Greek countryside. The juniper is macerated for 24 hours before distillation, while wild foraged sage, fennel seed, rosemary, bay leaf, locally sourced juniper, mastiha, lemon, orange, cardamom, and coriander are brought together in 200-liter copper pot stills. The result is dry, expressive, and beautifully structured, with a firm juniper backbone supporting waves of citrus peel, coriander, fennel, green herbs, resinous rosemary, and that unmistakable mastiha lift. At 43.5% ABV, it has enough weight and aromatic force to stand up in a Martini or G&T, but it is nuanced enough to reward careful sipping.
