This remarkable Espadín from Felipe Cortes is one of the most singular mezcals we have ever encountered, not because of exotic agave or experimental technique, but because of time. Distilled in April of 2010 in Mengolí de Morelos, Miahuatlán, this traditionally made Espadín rested quietly for more than fifteen years in a massive inert flex tank tucked away in the corner of Felipe’s own bedroom. This private batch reserved specially for the family is a true "en cámara" product . That extended resting period allowed the spirit to settle, integrate, and soften naturally without the influence of wood, resulting in a mezcal of rare composure and clarity. Produced by third and fourth generation mezcaleros Felipe and Ageo Cortes using pit roasting with encino and yegareche, tahona milling, open fermentation in sabino wood with well water, and double distillation in small copper alambiques with refrescadera, this is classic Miahuatlán mezcal elevated by patience rather than intervention. Only 1,266 bottles exist from what was once a much larger volume, most of which was never released, making this a true time capsule from an era long past. Mezcals like this simply are not made anymore, and even more rarely are they allowed to rest this long before bottling. The result is a poised, deeply expressive Espadín that rewards time in the glass just as it once demanded time in silence, offering a glimpse into what mezcal can become when tradition and restraint are allowed to do their work.
