Pardas was founded by Penedès growers Ramon Parera and Jordi Arnan after they acquired the historic Can Comas estate in Alt Penedès, where they planted local grapes like Sumoll and Xarel·lo. From the beginning, their work has centered on a holistic, biodynamic-inspired approach that integrates forest, crops, and vineyard into a single ecosystem. The vineyards are dry-farmed, soils are left unplowed to protect microbiology, and only organic methods are used. Pardas is part of a regional revival of native varieties, relying on cuttings from old local vines to reestablish traditional grapes. In the cellar, they use spontaneous fermentations and minimal intervention to craft wines that are expressive, mineral, and refined. The "Hermós" is a blend of 69% Xarel.lo and 31% Sumoll from four plots of clay/limestone soils. Grapes are hand-harvested, pressed together in tank, and cofermented. The wine is aged 6 months in stainless steel vats and 36 months in bottle, with zero dosage after disgorgement.
