This tiny fifty liter batch from maestro mezcalero Felix Macedas captures the rare character of Agave Kerchovei from the high desert of the Mixteca in Puebla. Macedas, a third generation producer working alongside his wife Antonia Pacheco at their palenque La Antiguedad in San Luis Atolotitlan, follows fully traditional methods with agaves roasted in a stone lined earthen pit, open fermentation in stone vats with mountain spring water, and slow double distillation in copper pots. Kerchovei is a difficult and truly wild species that thrives in semi arid soils once covered by prehistoric seas, producing small compact plants that rarely exceed a few feet in height or width and require more than a decade to mature. The result here is an ultra limited sixty six bottle K and L exclusive that shows lifted herbs, desert flowers, lime peel, dried mango, saline minerals, and a gentle smokiness that never overwhelms the fine texture. The finish lingers with cactus fruit, faint resin, and a clean stony echo. Yuku Savi supports ecological restoration and sustainable agave cultivation projects in Puebla and Oaxaca, making this singular release both a beautiful expression of place and a meaningful contribution to the future of the region. These 66 bottles were produced without the addition of water or anything else at a natural batch strength of 52% abv.
