If you weren’t aware, I’m a total sucker for Caol Ila. It’s a very large distillery, but only a fraction of its total production makes it out as single malt. I’ve even heard rumors that significant quantities of unpeated malt are produced for their blending needs. One thing I love about Caol Ila is that, like some of its Islay neighbors, it’s remarkably multifaceted. It’s difficult to determine whether these stylistic ranges are intentional, like Bruichladdich, or seasonal, like Laphroaig, but we have three barrels this year of different styles and ages, each in classic refill hogsheads. The idea was to capture three faces of Caol Ila and present them at stupendous prices. This second barrel from Old Particular is starting to offer a wilder side of the wonderful north shore distiller. The color is a bright yellow gold (0.4). The nose is powerful with green pepper, lime zesty, dense green peat and tense ashy smoke. There's some lovely soft oak to mellow a bit to already and hints of smoked meats. Dense dark ash smoke envelopes the palate and doesn't relent. Smoking embers, mesquite, dark roast wood, and a tense salty finish. A totally wonderful and unexpected side of this fabulous distillery.

The way that refill hogshead bourbon barrels really let the malt shine while giving it a little bit of a custard backbone is highly underrated. A lot of people seem to want a little more finish forward Scotch, but for those that know letting the grain showcase itself is really beautiful. Definitely peaty nose, medicinal forward with a little bit of candied citrus and a touch of toastier peat. The palate is rich and a little unctuous uncut, there's an indulgent kind of fattiness around the edges that just ends up coating everything, this kind of I can only describe it as happily burnt flavor. The finish is lingering with more char, lots of saline and a little bit of custard at the very end. Bottles like this really highlight the differences between the distillery releases and these limited special independent bottlings. Really a step up, in my opinion.

Notes

The Old Particular brand has been one of K&L's mainstays offering an incredible array of single malts from across the spectrum. Each year, K&L hand selects the finest barrels and presents them to our customers at stupendous prices. This year we've selected two wonderful Caol Ila's. Each barrel represents a progression in the maturity that the special distillery exhibits as it ages. This special barrel was distilled in November of 2010 and represents the more brooding and powerful style of Caol Ila. It was bottled in August of 2025 at a full cask strength of 57.9% alv by vol.
