This, the fifth release, was matured in a thoughtful mix of sherry-seasoned European and American oak with a touch of ex-bourbon, it shows the distillery’s deft balance of richness and finesse. The nose opens with warm honey, ripe stone fruit, and delicate floral tea notes. On the palate, peach nectar, toffee, and light citrus intertwine with gentle tannins and sweet oak. The texture is silky, carrying hints of roasted nuts and honeyed fruit into a long, elegant finish that echoes the oolong’s floral dryness. Created in collaboration with Jing Tea, the whisky celebrates both crafts’ shared reverence for water, land, and time. Even the packaging honors that connection, incorporating repurposed tea leaves into its paper.
