Domaine Servin’s Vaillons is entirely hand-harvested, with these vines ranging from twenty-five to more than thirty-five years of age and right in the sweet spot of their prime. This cuvée is raised entirely in stainless steel tank. The 2023 Vaillons offers up an outstanding nose of apple, pear, a touch of anise, citrus peel, chalky soil tones, white lilies and a topnote of beeswax. On the palate the wine is bright, focused and full-bodied, with lovely depth of fruit at the core, a fine girdle of acidity, excellent mineral drive and grip and a long, impeccably balanced and complex, vibrant finish.
