From the desert valley of Álamos, framed by the Sierra Madre and the Sea of Cortez, Kilinga Bacanora embodies the rugged beauty of Sonora. Maestro Rodrigo guides each step from seed to bottle, cultivating Angustifolia Pacifica agave in Kilinga’s own nursery to protect wild populations and preserve the region’s heritage. Mature plants are roasted for several days in underground clay and volcanic stone ovens fired with mesquite, then crushed with a traditional tahona to release rich, caramelized juice and fiber. Fermentation occurs in a temperature-controlled environment with a proprietary yeast strain before double distillation in copper and steel pot stills. The Blanco rests six months in stainless steel for harmony and depth, while the Reposado ages up to three years in a blend of rum, bourbon, and French oak casks. The Añejo matures over five years in ex–red wine French oak, developing notes of roasted agave, mesquite smoke, desert herbs, and sweet spice. Kilinga’s sustainable methods include replanting mesquite trees, composting fibers, and protecting bats that pollinate agave. The result is an elegant, soulful Bacanora that speaks with the true voice of Sonora.
