It is created by capturing less than half of one percent of the distillate that would otherwise evaporate into the air during the production of Cambridge’s Japanese Gin. To recover that ethereal fraction, William Lowe designed a bespoke fractional condensation system operating at pressures below those found at the summit of Mount Everest and temperatures as cold as the South Pole. The result is a process so exacting that more than fifty bottles of the base gin must be distilled to yield a single bottle of Watenshi. Only about six are produced each year. Distilled under vacuum and in micro batches, Watenshi incorporates Japanese botanicals such as shiso, sansho, yuzu, and sesame seed. The method preserves compounds that are normally lost, resulting in a spirit of extraordinary aromatic intensity and purity.
