Covalle Tomato Water Gin (750ml)

Covalle Tomato Water Gin (750ml)

Review Date: 11/2025

Who knew tomato water could feel this elegant? Covalle's take turns a humble garden staple into something cool, crisp, and quietly luxurious. Even for those who steer clear of tomatoes, this gin surprises - bright, refreshing, and smooth. The subtle vegetal note adds depth rather than bite, giving the botanicals a breezy sophistication. It's the kind of drink that feels like summer in a linen shirt - fresh, effortless, and a little unexpected.

I really like reviewing wacky things, and this is a wacky thing. This is a gin that has been infused, through a complex process of grinding up, centrifuging and then macerating, with the flavors and aromas of the stems and leaves of the tomato plant. There's just a lot going on here. There's a gin in the background, fairly soft juniper and botanicals and then there's the tomato plant that's this incredible mix of very savory herbaceous and some brighter almost kind of fruity notes hiding the back. It's bizarre and compelling and I want more of this kind of thing. The palate is dense, red fruits and then tons of greenery that reminds me of my Grandma's garden, when the tomatoes were growing you could walk between them and it would smell like this, just without the gin part, Grandma wasn't like that. This like the ultimate addition to a Bloody Mary or Caesar, and I think could make some really compelling martinis with the right vermouth (Tomato by Veso) and might just inspire me to finally make the tomato bitters I've been daydreaming about for the past couple months.

Notes

Covalle Tomato Water Gin is one of the most quietly radical spirits we have tasted in years, not because it chases novelty, but because it solves a real sensory problem with precision and restraint. Created by Project Optimist founder William Schragis, this gin set out to capture the unmistakable green aroma of peak tomato season without veering into cooked fruit or novelty flavors. Instead of using tomatoes themselves, Covalle is built from fresh tomato leaves and stems, processed alongside apple and cucumber pulp, then clarified and blended back into a classic London dry style base. The result is strikingly vivid yet completely dry, with juniper, angelica, and coriander providing structure, bright citrus notes of grapefruit and lemon oil adding lift, and subtle warmth from cardamom, orange, wildflower honey, cinnamon, and anise rounding out the finish. What stands out most is the aromatic profile, intensely green, herbal, and fresh, recalling crushed vines and sun warmed leaves rather than sauce or juice. Bottled at 46 percent ABV, it has the weight and clarity to shine in a Martini, adds remarkable dimension to a Negroni, and brings unexpected elegance to a simple Gin and Tonic. This is a thoughtful, technically accomplished gin that expands what the category can be while remaining deeply versatile, and it is exactly the kind of bottle we look for when innovation and drinkability meet.
