Willett 8 Year Old Wheated "2025 Limited Release" Kentucky Straight Bourbon Whiskey (750ml)

Review Date: 09/2025

Ahh, Willett. One of the most coveted names in bourbon and rye, this distillery and blending house continues to release some of the most remarkable American whiskies on the market. This limited offering, drawn from a rarely used wheated bourbon mashbill, may not be among their oldest releases, but it certainly stands tall in flavor. While the age statement reads eight years, that only reflects the youngest drop in the blend, and there is undoubtedly some older whiskey woven in. The aromas are immediately captivating, drawing you in with sweet cereal grains, fresh-baked pastries, bright stone fruits, and toasted vanilla beans. The palate bursts open with milk chocolate, Earl Grey tea, molasses, dried apricots, and butterscotch, lingering long on the finish and landing far softer than its 108 proof might suggest. Yet another triumph from the great house of Willett.

Notes

For years, Kentucky Bourbon Distillers, run by the Kulsveen family, has been bottling fantastic whiskey under their numerous labels; Willett being just one of the expressions (along with Noah's Mill, Rowan's Creek, Johnny Drum, etc.). Willett Distillery was actually founded in the 1930s by former Bernheim superintendent Thompson Willett, but subsequent generations of the family would become disinterested in bourbon until the distillery finally closed. Evan Kulsveen, who married Willett's daughter, purchased the abandoned site in 1984 with plans to reopen his father-in-law's once-great operation. Almost 30 years later, his kids Drew and Britt have the site refurbished and producing some of Kentucky's finest bourbon. This rare expression is from their unusual wheated mashbill consisting of 65% corn, 20% wheat, and 15% malted barley. The 8 year age statement is not the age of the oldest bourbon in this batch, and the avereage age is likely over 10-year-old, although precise details about the age of this batch have been difficult to secure. It is bottled without chillfiltration to preserve the full character of this special spirit.
