Terroir al Límit was founded in 2003 by Dominik Huber and Eben Sadie. Both fell in love with the Priorat region while working at Mas Martinet and Cims de Porrera, respectively. They later teamed up with local winemaker Jaume Sabaté, who offered guidance on where to find the best vineyard plots and how to cultivate them. The winery’s style has evolved dramatically since its early days, transitioning from a “New World” approach—harvesting late and using significant amounts of new oak—to a more subtle style. The grapes are now harvested earlier, fermented as whole clusters and a gentler “infusion” style of extraction is favored. Over time, the winery transitioned to larger oak vessels and in 2021, all wood was eliminated, instead opting for neutral materials like concrete and steel to better express the purity and character of the local terroir. Unlike the site-specific wines of Terroir al Límit, Terroir Històric is devoted to expressing the overall character of Priorat in two colors: white and red. The project, which encourages young farmers to return to family vineyards in the nine villages in and around Torroja, was launched in 2015. Històric Negre is a blend of Priorat’s traditional red varieties: Grenche Noir (75%) and Cariñena (25%), sourced from many small family-owned vineyards in the nine villages. The grapes are hand harvested, fermented as whole clusters, as aged in stainless steel tanks for six months.
