Note: from purchased must where the blend is typically 80% Vaillons proper and 20% Les Lys. Pretty and attractively layered aromas are comprised by notes of white pepper, floral, lemon and orange zest and a whiff of shellfish character. The racy and almost painfully intense medium weight flavors conclude in a decidedly austere, firm and serious finish where the only nit is a hint of warmth. At least some patience suggested.

The 2023 Chablis Vaillons 1er Cru leans toward grapefruit and white peach scents, with a little more sharpness compared to its peers. The palate is taut on the entry, with a keen line of acidity. It's fresh with touches of persimmon on the finish. There's good linearity here. This is a well-crafted Vaillons. Tasted blind at the BIVB offices in Chablis.(NM)

It seems like almost every producer makes a "Vaillons" but every producer does not make a "Vaillons" as good as this. Classic orchard fruits notes veering towards pear and apple mix with hints of wet stone and flint. Good minerality, excellent acidity and firm structure give this Chablis a classic feel.

Another absolutely lovely Chablis, not to ruin the whole review for you, or anything like that, but this is very good and I will be saying very nice things about it in the words to follow. The nose is so lovely, just a very slightly touch tropical, a little bit of dried pineapple, white peach, some perfectly ripe pear, and a touch of something flinty in the far back. The palate is much more classic, ripe apple and pear, very slightly pithy candied lemon. There's just fantastic minerality on the finish which sort of flashes between a healthy but mouthwatering acidity and the minerality going back and forth with each other on the finish. This is just such a nice and bottle of Premier Cru Chablis, and another worthy bottle for your Summer White Wine Rotation. My advice to pick up a few and age at least one of them a few years, you'll be surprised at what you find with a well aged Chablis.
