This exceptional brand is the brainchild of Edoardo "Lalo" Orendain. He's not resting on his family's legacy and created a new and exciting brand with the help of Rare Character founder Pete Nevenglosky. Together they're pushing the old distillery to new heights. It's particularly interesting to have a single barrel of the family brand on the shelf at the same time - the Arette barrel being selected from proof down samples, while the Paladar drawn straight from the cask having been proofed in advance of aging. Let's go. The color is a striking golden ripe corn (0.4). The nose is expressive and nearly tropical in its aromatic profile offering sweet ripe guava, hints of pineapple and exotic spices. With further aeration a sweet fresh vanilla bean character and a wild flower note poke through the pungent basket of tropical orchard fruits. The palate is surprisingly rich and spicy, with sweet oak, gorgeous velvety texture and a purity of character that's rarely matched in single cask tequila. Not to be overly effusive, but this is the closest we've gotten to the sweet supple single barrel Fortaleza's in modern bottlings. A super secret that absolutely delivers a hugely satisfying experience.

This Tequila was cut before being barreled, so the water that would have been added anyhow was put in and aged with the spirit instead of being added just before bottling, this is a fairly unique process in part due to the fact that it requires more barrels and more space to hold the same amount of overall proof, and ultimately most businesses are into being more economical especially with things as expensive as barrels. The result here, whatever the process, is absolutely stunning and I have found myself in a situation where I think I'm going to end up buying my dad, Dave, two bottles of Tequila for his birthday this year. I'm sure he won't be upset by that. The nose feels a little round, with really pretty coconut and tropical fruit showing through, accompanied by a little spiced vanilla and some cooked agave. The palate is really really tasty, a good amount of sweet agave, some dried pineapple, kind of a spiced rice pudding kind of flavor and a touch of minerality on the finish. This is really tasty, kind of makes me regret I never picked up one of their regular bottlings before, but I definitely certify this also as the kind of Tequila you buy your Dad for his birthday.

Notes

From the last remaining of the independent founding families, the Orendains, Paladar pays homage to the traditions of Jalisco. Using only minimum 7-year-old blue weber from their own fields. Every one is cooked slowly in traditional brick ovens and open-air pine-box fermenters with wild and proprietary yeast. Each batch of Paladar is twice distilled in a copper and stainless steel pot blend. This brand celebrates the classic El Llano distillery, which the Orendains have kept authentic for over a century. This exceptional single barrel was selected by the K&L Spirits buyers for it's wild complexity and unique character. Barrel A22 was bottled without the addition of water before bottling meaning it spent over a year in an ex-bourbon barrel at lower than typical proof of 110 abv. The results are striking compared to the standard barrel offerings as different flavor elements in the oak are soluable in water in different proportions than ethanol. It offers a hyper intense example of this estate grown additive free tequila in its finest form.
