This might be my point of no return for the Fernet rabbit-hole. Such a consistent profile across all their amari. This one is at the digestif end of their spectrum. If you have a Fernet lover in your circle, they'll flip for it! Deep and herbaceous, slightly minty with a hint of chocolate. I will look back to this bottle from now on.

A lot of the time when I have Fernet, I feel like it really hates me and hates that I'm drinking it. Humans are far too quick to identify with things, and that's a great example. This is an almost gentle Fernet, it lovingly strokes my cheek before giving me a little playful slap, and I'll be honest, in this single instance I don't mind and of course gave consent. This is a dense and chewy one that has this kind of tootsie roll vibe in the very background, root beer, cola, sassafras, there's notes of all of these and a lingering but complexly bitter finish, it's not just bitter, there's edges and corners to explore with each sip. This is super fun and one of my favorite things from today's tasting.

Notes

Hailing from northern Italy, Fernet is widely considered an acquired taste as it is one of the most bitter herbal liqueurs in the world. Because the use of gentian is restricted in Japan, Iseya's Tatsuya Motonaga needed to get creative in order to approximate the level of bitterness he was striving for. As a result, he incorporated ingredients like chicory and aloe to give this fernet the bitter punch it needed. A delicate balance between umami and the moderate sweetness of honey is maintained by the blending of aged as well as unaged spirits in its base. About 15 of its over 30 botanicals are grown at Iseya Distillery's farm in Kanagawa and are macerated for alternating times before being rested in stainless steel for no less than 10 days. This fernet is truly a labor of Moto san's love for the category and offers a new interpretation of this classic amaro.
