Nicely intense flavors of brown spices, fresh croissant, poached apple and spring blossoms spread across the palate. High-wattage acidity contrasts the nicely-extracted, custardy core. Layered and concentrated on the finish, this will age beautifully. The freshness here is in part due to the concrete eggs and large format (500 L) barrel Cyril uses.
